Ms. Fredrika Ornbrant, Consul General of Sweden hosted a dinner reception, prepared by renowned Swedish chef Magnus Albrektsson to commemorate the 2014 awardees of the Nobel Prize. Held at the Consul General’s residence in Mumbai, the event was attended by a select gathering of Swedish business leaders that operate out of India.
Guests got to enjoy a typically Swedish menu which included an appetizer of a ‘Swedish Smorgasboard’ comprising seared gravlax with mustard sauce and dill, marinated beets with vasterbotten cream on a small hash brown, matjes herring salad with sour cream, pickled onion and chives, tartar of smoked and fresh salmon with pickled cucumber on homemade hard bread. For main course, dill fried fresh shrimps on a lukewarm potato salad was served along with a leg and rack of lamb with cauliflower, mushrooms and tomatoes whilst dessert was cardamom infused apples with Swedish pancakes vanilla cream and caramelized almonds.
Commenting on the event, Ms. Ornbrant said: “In tribute to the awardees of the Nobel Prize this year, it is only fitting for us to celebrate their success with a Swedish soiree, cooked by one of the leading Swedish chefs. I am pleased to have Chef Albrektsson visit us in India and I hope that this inspires people to appreciate the diversity of Swedish cuisine.”
Chef Albrektsson said: “This is my first trip to India. I was pleasantly surprised to witness the rapid strides undertaken by India in its culinary journey. Just like Sweden, India has a rich and varied culinary legacy. Sweden’s nature and the produce it yields creates opportunities for exclusive culinary experiences. And as the Swedish food scene grows, a new style of cooking is developing. Swedish chefs are returning to their culinary roots, rediscovering classic Swedish dishes and fantastic local seasonal ingredients and giving them a modern twist.”
Chef Albrektsson, who was specially flown down from Stockholm for the event, has over 20 years of experience in top restaurants in Sweden and the Caribbean.
